Columbia hops grown using organic farming principles in west Sonoma County.
This dual purpose hop is a high alpha varietal with a neutral bitterness and intense aroma. Floral and citrus notes come out in both aroma and flavor, but can be very pungent, which makes Columbus great for late additions to a boil or dry-hopping. Columbus is a perfect choice for IPAs, Pale and Imperial Ales. Please note that this hop is also referred to as Tomahawk, Zeus, or CTZ.
Whole cone hops are typically the preffered format for dry hopping as they maintain contact with the beer by floating, they are easier to remove than pellets and they add a unique character to the beer. Adding whole cone hops directly to the mash tun is also a great way to add some extra hop flavor and to clarify your wort as it filters through the flowers.
Columbus are similar to Chinook, Nugget and Millennium for substitutions in your brew.
Hops are harvested in early-to-mid August. We will send updates of anticipated harvest based on how the hops are maturing in the hop yard. For orders of 50 lbs and up the order will be delivered the day of harvest within Sonoma, Marin, Napa counties. For delivery to other Bay Area counties please contact us. For orders less than 50 lbs they can be picked up at our west Sebastopol farm the day they are harvested. For use in wet-hopped beer we recommend brewing within 48 hours of harvest. For orders over 100 lbs contact us for volume discount pricing.
